Chinese beef on spicy noodles

If you fancy a Chinese meal this weekend, why not try making your own at home, with this simple recipe from chef Eadie Manson?

Eadie’s spicy beef noodle dish is made with tasty ingredients such as Chinese five-spice, red chillies, limes, paprika, honey, ginger and Worcester sauce, giving it a really fragrant, oriental taste.

Sirloin steak, mange tout, baby corn and coriander are also used in this meal, which is a bit healthier than your average takeaway!

Ingredients (for the beef)
• 2 sirloin steak
• ½ red chilli, diced
• Pinch of Chinese 5 Spice
• 2tbsp olive oil

Method:
1. Season the steak with the other ingredients and allow to marinade
2. Heat the chargrill pan and sear the steak for 90 seconds on each side
3. Remove and allow to rest, carve then serve.

Ingredients for the dressing:
• 1 tbsp Worcester sauce
• 1 tsp sesame oil
• 1 clove of garlic, grated
• 1 piece of ginger, grated
• ½ red chilli, diced
• 5 spring onions, sliced
• 2 limes - zest of 1 and juice of both
• ½ tsp paprika
• 1 tbsp rice vinegar
• 2 tsp fish sauce
• 2 tbsp runny honey
• 3 tbsp olive oil
• Seasoning

Method:
1. Combine all the ingredients in a bowl and whisk
2. Season then remove 1/3 of the dressing

Ingredients for the noodles:
• 1 piece from a packet of egg noodles
• 50g green beans, cut in half diagonally
• 50g mange tout, cut in half diagonally
• ½ packet of baby corn, halved
• 3 tbsp coriander, chopped

Method:
1. Bring a large pan of boiling salted water to the boil, add the noodles
2. After 2 minutes add the vegetables
3. After another 2 mintues, drain the noodles and vegetables and toss them through the dressing above. Finish with the chopped coriander
4. Place on the plate, add the steaks and drizzle over the remaining dressing
