Sausage and winter mash with onion gravy

The cold weather is starting to hit now, and when this time of year comes around there’s nothing better than a hearty comfort meal to come home to.

Jacqueline O’Donnell of The Sisters restaurants in Glasgow is an expert at making substantial, down-to-earth meals, and here she shares another recipe for one – sausage and winter mash with onion gravy.

This dish is made with good quality sausages, potatoes, brussel sprouts, onions and mustard, and is sure to keep you going.

If you fancy trying out the chef’s dish for yourself, here is the recipe complete with step-by-step instructions:

Ingredients:
• 4 good quality sausages regular or reduced fat
• 2 parsnips
• 2 or 3 medium potatoes
• 175gr brussel sprouts
• 4 tbsp milk
• 1 tbsp wholegrain mustard
• 1 whole onion sliced
• 1lb/500gr Onions peeled & sliced
• 2 tbsp oil
• 1 tbsp brown sugar
• 1 tbsp Worcester sauce
• 1 tsp mustard powder
• 500ml hot stock
• 1 tsp flour

Method:
1. Grill the sausages for 10-12 minutes, turning frequently. Meanwhile, peel and roughly chop the parsnips and potatoes, then cook in boiling salted water for about 10 mins. Shred sprouts, add to the pan for the last 2-3 mins and cook until all the vegetables are tender.
2. Drain and mash the vegetables, then beat in the milk and mustard with salt and pepper. Serve with the sausages.
3. Meanwhile, for the gravy, mix onions 1 tsp oil and flour in a pot.
4. Add Worcester sauce, mustard to the stock gradually add this to the onion pot.
5. Whisk until gravy consistency adjust the seasoning and simmer for 2 minutes
