It’s the last Friday of the month so we reckon that means we all deserve a treat for sticking to our Eat Well resolutions so well!

Start the day with a healthier version of a traditional fry up, which will keep you satisfied until lunch.

Did you know grilling the ingredients can make it healthier? Chef Brian Turner shows us how to enjoy a traditional favourite in a healthy way.

For lunch avoid soggy sandwiches and try a Mediterranean style spinach and cherry tomato frittata.

This simple, tasty dish only takes about 20 minutes to make and can easily be prepared the night before. Add some salad and hey presto the perfect light lunch!

Once you’ve mastered the technique try experimenting with different ingredients, add some chilli pepper to spice things up or try adding flaked fish such as tuna or salmon.

For dinner we’ve got a Mexican themed treat. After last night’s Zumba ® Fitness Nation event you might still be in the Latin spirit so give our mince and bean burrito a try.

It’s made with leftover ingredients including mince and potatoes and others such as pepper, onions, garlic and tomatoes, you could even use up your left over haggis!

The beauty about this dish is that you can substitute the ingredients in the recipe with whatever is in your cupboard, so it’s very versatile.

If you want to make it healthier leave out the chocolate and try using quorn, low fat turkey mince or just vegetables.
