Daily Cooks Challenge: roasted skate wing with mustard seed butter

INGREDIENTS
2 x 150g fresh skate wings
2 tbsp olive oil
½ gem lettuce
120g butter
200ml good strong chicken stock
150ml double cream
Chives
1 glove garlic
½ tsp grain seed mustard
Lemon juice, salt and black pepper to taste

METHOD

Preheat oven at 215?C.

Heat a frying pan with some olive oil. Fry the skate wings on one side for one minute to colour. Turn them over and put the pan in to the oven for four minutes at 215?C.

In a small pan bring 150ml of chicken stock to the boil and reduce by half the volume add cream and reduce again. Whisk in the butter.

Remove the sauce from the stove and add the chopped chives and seed mustard then season with salt, pepper and lemon juice.

In another pan add the remaining 50ml chicken stock and dessert spoon of butter and garlic glove.

Cut the lettuce into four and add to the liquid and fry until tender.

Place the lettuce in the centre of the plate top with a skate wing (bone removed) and drizzle over the sauce.
